We love Mosaic hops. Originating from the Pacific Northwest, these American-grown hops explode with aromas of ripe mango, pineapple, and tangerine. We combine this fruit basket of flavor with a brett-forward, foedre-aged blonde ale to create something special.
With one foot in the barrel-aged sour world, and the other in the land of IPAs, this style-breaking exploration of flavor is a blast of aroma followed by a complex funky oak finish. Pair with spicy-scallop rolls, mango chicken stir fry, and toasted coconut donuts.
Hoppy Sour Series
Our Farm to Barrel beers follow the age-old tradition of maturing beer in oak casks. Each Hoppy Sour release begins with a blend of barrel-aged sour blonde ale and brettanomyces-fermented farmhouse ale. Right before bottling this tart and funky brew is generously dry-hopped with a single variety of hop to create a delicious contradiction of flavor and style.
